Post-Workout Breakfast

As a simple, fairly quick breakfast after a medium-intensity workout, here’s a variation of my go-to:

2 eggs scrambled in about 1 Tbsp coconut oil
1-2 cups veggie saute (this morning I had leftover veggies from yesterday, so the portion was a little small) e.g sauteed onion, cabbage, kale, and spinach, sauteed in 1 Tbsp coconut oil or butter
1/4 avocado, sliced
1 cup of my favorite oatmeal mix, topped with 1/4 apple, dried cherries, frozen blueberries, pepitas, almond milk, and peanut butter

I eat this within 30-60 minutes after a workout lasting about 50-70 minutes.  The workout is literally a workout: pushing my limits either in speed or strength.
